  • 1 cup fresh lemon juice (about 4-6 lemons) Use freshly squeezed lemon juice for best flavor.
  • 1 cup sugar
  • 1 cup water
  • 1 cup fresh basil leaves, packed Finely chop or tear to enhance flavor.
  • a pinch salt
  • Zest from 2 lemons lemon zest

Instructions
 

Preparation

  • In a medium pot, combine the sugar and water. Heat over medium heat until the sugar dissolves completely, about 4-5 minutes.
  • Remove the pot from heat and add the fresh basil leaves. Allow it to steep for about 30 minutes.
  • Strain the basil leaves out and add the fresh lemon juice, lemon zest, and a pinch of salt to the sugar water. Mix well.
  • Pour the mixture into a shallow dish and place it in the freezer.
  • Every 30 minutes, stir the mixture with a fork for about 3 hours, or until it is fully frozen and has a fluffy texture.
  • Once done, scoop it into bowls and enjoy!

Notes

Serve in chilled bowls and garnish with fresh basil leaves or lemon slices for a beautiful presentation. Store in an airtight container in the freezer for up to two weeks. If too hard, let sit at room temperature for a few minutes before scooping.
