Lamb Sliders with Herby Yogurt Sauce and Roasted Peppers

Ingredients
  

For the Herb Yogurt Sauce

  • 1 cup Greek yogurt
  • 2 large handfuls fresh parsley, chopped Use fresh for the best flavor
  • 1 large lemon, zested and juiced
  • 1-2 tbsp olive oil (for the sauce) Adjust to achieve desired consistency
  • 1/4 tsp oregano

For the Lamb Patties

  • 1 lb ground American lamb
  • 4 large cloves garlic, minced
  • 3/4 tsp salt for the lamb
  • 1/4 tsp pepper for the lamb
  • 2 tsp dried oregano for the lamb
  • 1 tbsp olive oil (for cooking)

For the Roasted Vegetables

  • 2 large green bell peppers, thinly sliced
  • 1/2 large red onion, thinly sliced
  • 1 tbsp olive oil
  • Salt to taste
  • Pepper to taste

For Serving

  • 8 pieces Brioche buns, toasted
  • Lettuce or arugula for serving

Instructions
 

Make the Herb Yogurt Sauce

  • Add all the yogurt sauce ingredients to your food processor. Pulse to combine and add more olive oil as needed until smooth. Refrigerate until ready to use.

Roast the Peppers & Onions

  • Preheat your oven to 425° F. On a large baking sheet, toss together the sliced peppers, onions, olive oil, salt, and pepper.
  • Roast for 18-24 minutes, turning halfway through, until they are tender and slightly charred. Set aside.

Make the Lamb Patties

  • While the veggies are roasting, prepare the lamb sliders. In a bowl, mix the ground lamb with garlic, spices, and olive oil. Be careful not to overmix.
  • Form the mixture into 8-10 small patties, flattening them slightly.
  • Heat a skillet over medium heat and cook the patties in batches for about 2-3 minutes on each side. Cover the pan with a lid to keep the heat in.
  • Use a meat thermometer to check that the patties reach an internal temperature of 160° F.

Serve + Store

  • To assemble the sliders, place a handful of greens on a toasted bun. Add a slider patty, a spoonful of the yogurt sauce, and top with the roasted peppers and onions.
  • Store any leftover slider patties in an airtight container in the fridge for 3-4 days.

Notes

Make sure not to overmix the lamb mix to keep the patties tender. Use fresh herbs for the yogurt sauce for the best flavor. Feel free to adjust the level of seasoning to your taste. If you can't find brioche buns, any soft burger bun will work.
