Ingredients
  

For the Lamb Patties

  • 1 lb ground lamb
  • 2 1/2 tsp dried rosemary
  • 2 tsp dried oregano
  • 2 large garlic cloves, grated or minced
  • 1/4 small onion, grated or finely minced
  • 1 tsp kosher salt
  • 1 large egg yolk
  • 3 tbsp plain breadcrumbs (panko works too)
  • 2 tbsp + 1 tsp olive oil, divided
  • 15 medium mini pitas (or slider buns if preferred)

For the Dill Greek Yogurt Sauce

  • 1 cup Greek yogurt
  • 1 tsp dried dill
  • 2 tsp lemon juice
  • Salt and pepper, to taste
  • 1 medium cucumber, thinly sliced

Instructions
 

Preparation

  • In a large bowl, combine the ground lamb, rosemary, oregano, garlic, onion, salt, egg yolk, breadcrumbs, and 1 teaspoon of olive oil. Mix until just combined, but be careful not to overmix.
  • Divide the mixture into 15 portions. Roll each portion into a ball and then flatten into small patties that fit inside the mini pitas.

Cooking

  • Heat a large skillet or griddle over medium-high heat and drizzle with 1/2 tablespoon of olive oil. Add half of the patties and press each with a spatula. Cook until golden and crispy, about 2-3 minutes per side.
  • Repeat with the remaining patties, adding more oil as needed.

Making the Sauce

  • In a small bowl, mix the Greek yogurt, dried dill, lemon juice, and 1 teaspoon of olive oil. Season this mixture with salt and pepper to taste.

Assembly

  • Cut a slit in each mini pita and place a lamb patty inside. Add a dollop of the dill Greek yogurt and layer with cucumber slices. You can garnish with extra dill if you like.
  • Serve warm for a delicious Mediterranean bite-sized meal!

Notes

These sliders are best served warm. If you have leftovers, store the patties in an airtight container in the fridge for up to 3 days. The yogurt sauce can be stored separately in the fridge for up to a week.
