  • 1 can can of corn (drained) You can use frozen corn, but thaw and drain it first.
  • 1 cup shredded mozzarella cheese Use freshly grated for best melt and texture.
  • 1/2 cup mayonnaise Can be substituted with Greek yogurt for a lighter version.
  • 1 tablespoon sugar Adjust according to taste.
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste Season as desired.
  • Chopped green onions for garnish

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a mixing bowl, combine the drained corn, mozzarella cheese, mayonnaise, sugar, garlic powder, salt, and pepper.
  • Mix well until all ingredients are thoroughly combined.
  • Transfer the mixture to a baking dish.
  • Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and garnish with chopped green onions.

Notes

Korean Corn Cheese is best served hot and fresh from the oven. It pairs well with grilled meats, fried chicken, or can be enjoyed on its own. For extra flavor, consider adding chopped jalapeños or diced bell peppers. You can customize it by adding cooked bacon bits or spicy kimchi, or sprinkle breadcrumbs on top before baking for a crunchy topping.
