Ingredients
  

  • Watermelon, cubed into 1 inch pieces - 4 cups
  • Strawberries, sliced into rounds - 1 1/2 cups
  • Raspberries - 1 1/2 cups
  • Cherries, pitted and halved - 1 1/2 cups
  • Fresh lime juice - 2 tbsp
  • Lime zest - 1 1/2 tsp
  • Agave syrup - 2 tbsp
  • Fresh mint, finely chopped - 1 tbsp

Instructions
 

  • In a large bowl, gently toss cubed watermelon, sliced strawberries, raspberries, and halved cherries.
  • In a small bowl, whisk together fresh lime juice, lime zest, agave syrup, and chopped mint to make the dressing.
  • Pour the dressing over the fruit and toss gently to coat, being careful not to crush the berries.
  • Serve chilled, garnished with extra mint leaves and lime wedges.

Notes

For added crunch, you can add English cucumber cubes.
Substitute frozen cherries if fresh are unavailable; be sure to drain excess liquid to avoid a soggy salad.
Monk fruit syrup can be used in place of agave syrup for a lower net carb option.
Assemble just before serving to maintain crisp texture.
