Ingredients

  • 1 cup strawberries, pureed Use ripe strawberries for the best flavor.
  • 1/2 cup coconut oil, melted
  • 1/2 cup cream cheese, softened Can use dairy-free cream cheese for a dairy-free version.
  • 1/4 cup powdered erythritol Adjust to taste; can substitute with other low-carb sweeteners.
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • In a mixing bowl, combine the pureed strawberries, melted coconut oil, softened cream cheese, powdered erythritol, and vanilla extract.
  • Mix well until smooth and fully combined.
  • Pour the mixture into silicone molds or mini muffin trays.
  • Place in the freezer for about 1-2 hours until solid.
  • Once set, remove from molds and store in the refrigerator.

Notes

These fat bombs can be served chilled straight from the fridge or with fresh berries. Store in an airtight container; lasts up to two weeks in the fridge or a month in the freezer.
