Ingredients
  

For the Pretzels

  • 3 cups shredded mozzarella
  • 2 tablespoons cream cheese
  • 1.5 cups almond flour
  • 2 teaspoons xanthan gum
  • 2 teaspoons active dry yeast (mixed with 2 tablespoons warm water)
  • 2 eggs eggs
  • 3 tablespoons melted butter (divided)
  • 1 tablespoon coarse salt for sprinkling on pretzels
  • 1 cup heavy whipping cream
  • 1/8 teaspoon xanthan gum for cheese sauce
  • 1 cup shredded cheddar cheese

For the Mustard Butter (optional)

  • 4 tablespoons room-temperature butter
  • 1 teaspoon whole-grain mustard
  • 1/4 teaspoon raw honey adds sweetness

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave for about 30 seconds and stir until smooth.
  • In another bowl, mix almond flour, xanthan gum, and the active dry yeast mixture. Combine with the cheese mixture.
  • Add eggs and 2 tablespoons of melted butter. Mix until a dough forms.
  • Divide the dough into 8 pieces. Roll each piece into a long rope and shape it into a pretzel.
  • Place the pretzels on a baking sheet lined with parchment paper. Brush them with the remaining melted butter and sprinkle with coarse salt.

Baking

  • Bake for 12-15 minutes or until golden brown.

Cheese Dip (optional)

  • In a small saucepan, melt butter over medium heat.
  • Add heavy whipping cream and bring to a simmer.
  • Stir in cheddar cheese and xanthan gum until the cheese is melted and the sauce is smooth.

Mustard Butter (optional)

  • Mix room-temperature butter with whole-grain mustard and raw honey in a small bowl.

Notes

Make sure your cheese mixture is smooth. Don’t skip the xanthan gum as it helps give the pretzels a chewy texture. Roll the pretzels quickly to maintain their shape before baking. Store leftovers in an airtight container for up to three days in the refrigerator, or freeze for up to a month.
