Ingredients
  

For the crust

  • 1.5 cups crushed keto-friendly Oreo cookies Ensure they are finely crushed for a good crust.
  • 0.25 cups unsalted butter, melted Melt before mixing with the cookie crumbs.

For the cheesecake filling

  • 8 oz cream cheese, softened Make sure it's softened for easier mixing.
  • 0.5 cup powdered erythritol Adjust sweetness to taste.
  • 1 tsp vanilla extract
  • 2 large eggs Add one at a time to the mixture.
  • 0.5 cup sour cream
  • 0.25 cup cocoa powder For a rich chocolate flavor.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine the crushed keto Oreo cookies and melted butter.
  • Press the mixture into the bottom of a greased baking pan to form the crust.
  • In a mixing bowl, beat the cream cheese with powdered erythritol until smooth.
  • Add the vanilla extract, eggs, and sour cream, mixing until well combined.
  • Stir in cocoa powder until mixed evenly.
  • Pour the cheesecake mixture over the crust, spreading it evenly.

Baking

  • Bake for about 25-30 minutes or until the center is set.
  • Let cool and refrigerate for at least 2 hours before serving.

Serving

  • Cut into bars and enjoy!

Notes

Serve chilled. Great on their own or topped with whipped cream or additional crushed keto-friendly Oreos. Store in an airtight container in the refrigerator for up to one week.
