  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 6 slices crispy bacon, cooked and crumbled
  • 1/2 cup sugar-free BBQ sauce
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish

Preparation

  • Preheat your oven to 375°F (190°C).
  • Season the chicken breasts with salt and pepper and place them in a baking dish.
  • Spread the sugar-free BBQ sauce evenly over each piece of chicken.
  • Top each chicken breast with shredded cheese and crumbled bacon.

Cooking

  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.
  • Garnish with chopped green onions if desired and serve.

Notes

Keto Monterey Chicken is best served hot, paired with a side salad or steamed vegetables. It can be stored in an airtight container in the refrigerator for about 3 to 4 days after cooling down to room temperature. Reheat in the oven or microwave.
