  • 8 ounces corned beef, thinly sliced
  • 1 cup sauerkraut, drained Make sure to drain well to avoid soggy roll-ups.
  • 4 ounces Swiss cheese, shredded
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Oil for frying

Preparation

  • In a bowl, mix together the mayonnaise and Dijon mustard.
  • Lay out slices of corned beef, and top each with a spoonful of the mayonnaise mixture, followed by sauerkraut and shredded Swiss cheese.
  • Roll each slice tightly and secure with a toothpick if needed.

Cooking

  • Heat oil in a skillet over medium heat.
  • Place the roll-ups seam side down in the skillet and cook until golden and crispy, turning to brown all sides.
  • Remove from the skillet, let cool slightly, and serve.

Notes

These roll-ups can be served warm as a snack or appetizer. They pair well with extra sauerkraut or dipping sauces like Thousand Island dressing. For baking, preheat the oven to 400°F and bake for 15-20 minutes until golden brown. Consider adding pickles or sliced jalapeños for extra flavor.
