Ingredients
  

For the Cloud Bread

  • 1 cup full-fat cottage cheese
  • 3 large eggs, separated
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon garlic powder (optional) can be omitted
  • 1/4 teaspoon onion powder (optional) can be omitted
  • pinch salt

Instructions
 

Preparation

  • Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper.
  • Separate the egg whites from the egg yolks, placing the whites in a clean bowl.
  • Whip the egg whites with cream of tartar until stiff peaks form.
  • In another bowl, combine the egg yolks, cottage cheese, garlic powder, onion powder, and salt.
  • Gently fold the whipped egg whites into the cottage cheese mixture until just combined.
  • Spoon dollops of the mixture onto the prepared baking sheet to form rounds.

Baking

  • Bake for 25-30 minutes until golden brown and firm.
  • Cool in the oven with the door slightly ajar for 10-15 minutes before removing.

Notes

Store cooled bread in an airtight container in the refrigerator for up to a week or freeze for up to three months. Can be served as a side, in sandwiches, or toasted.
