  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional) Add for extra flavor
  • Fresh cilantro, chopped (for garnish)

Cooking

  • In a large skillet, heat olive oil over medium heat.
  • Add the diced onion and bell pepper, and sauté until soft.
  • Stir in the minced garlic and cook for another minute.
  • Add the ground beef and cook until browned.
  • Drain excess fat if necessary.
  • Stir in the diced tomatoes, chili powder, cumin, salt, and pepper.
  • Let the mixture simmer for about 5-10 minutes.
  • Optional: Top with shredded cheese and cover until it melts.
  • Garnish with fresh cilantro before serving.

Notes

Serve hot. Pair with avocado slices or a dollop of sour cream. Can be stored in the refrigerator for 3-4 days. Optionally freeze in a freezer-safe container.
