Ingredients
  

Pasta and Vegetables

  • 8 oz pasta Any type of pasta can be used.
  • 2 cups fresh corn kernels Use fresh corn for sweetness.
  • 1 red bell pepper, diced Adds color and crunch.
  • 1 cup cherry tomatoes, halved Adds a juicy flavor.
  • 1/4 cup red onion, finely chopped Can be adjusted for less pungency.
  • 1/4 cup fresh cilantro, chopped Can substitute with parsley if desired.
  • 1/2 cup feta cheese, crumbled Add goat cheese for variation.

Dressing

  • 3 tbsp olive oil Use extra virgin for best flavor.
  • 2 tbsp lime juice Can substitute with lemon juice.
  • Salt and pepper to taste Adjust according to preference.

Preparation

  • Cook the pasta according to package instructions. Drain and let cool.
  • In a large bowl, combine the cooked pasta, corn, bell pepper, cherry tomatoes, red onion, cilantro, and feta cheese.
  • In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  • Pour the dressing over the salad and toss to combine.

Serving

  • Serve chilled or at room temperature.
  • This salad pairs well with grilled meats or can be enjoyed on its own.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. If pasta absorbs too much dressing, add more olive oil and lime juice before serving.
