Ingredients
  

For the Baconnaise

  • 1 cup Mayonnaise Creamy base for the sauce.
  • 4 slices Chopped crispy bacon Makes it Baconnaise.
  • 2 tablespoons Ketchup For sweetness.
  • 1 tablespoon Yellow mustard Adds zesty brightness.
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Apple cider vinegar For acidity.
  • 1 tablespoon All-purpose rub Salt, pepper, garlic blend.
  • 1 teaspoon Red pepper flakes For heat.

For the Burgers

  • 1.5 pounds Ground chuck (80/20) The secret to a juicy burger.
  • 1 large White onion Sliced paper-thin.
  • 8 slices Bacon Half for the sauce, half for crunch.
  • 1 teaspoon Kosher salt
  • 1 teaspoon Coarse black pepper
  • 1 teaspoon Granulated garlic
  • 2 tablespoons Avocado oil For cooking.
  • 6 slices Pepper jack cheese For melting.
  • 2 tablespoons Prepared yellow mustard
  • 6 pieces Burger buns Soft and toasty.

Instructions
 

Prepare the Bacon

  • Start by cooking 4 slices of bacon until crispy. Set aside to cool, then chop into small pieces for the Baconnaise.

Make the Baconnaise

  • In a bowl, mix together the mayonnaise, chopped bacon, ketchup, yellow mustard, Worcestershire sauce, apple cider vinegar, all-purpose rub, and red pepper flakes. Stir until well combined and set aside.

Cook the Onions

  • In a skillet, add a little avocado oil and then the sliced onions. Cook over medium heat until they are soft and caramelized, about 10-15 minutes. Remove them from the skillet and set aside.

Form the Patties

  • In a large bowl, mix the ground chuck with kosher salt, coarse black pepper, and granulated garlic. Form into 6 equal balls.

Smash and Cook the Patties

  • Heat the remaining avocado oil in the skillet over high heat. Add the meatballs to the skillet, then smash them down with a spatula to form patties. Cook for 2-3 minutes until browned, then flip them over.

Add Cheese

  • Place a slice of pepper jack cheese on each patty. Cover the skillet for about a minute to melt the cheese.

Prepare the Buns

  • Lightly toast the hamburger buns in the same skillet where the burgers were cooked.

Assemble the Burgers

  • Spread some Baconnaise onto the bottom bun, then add the burger patties, caramelized onions, and finish with the top bun.

Notes

Use 80/20 ground chuck for the juiciest burgers. Don’t be afraid to really smash the patties down for that crispy edge. Allow the cheese to melt completely for a gooey texture. Adjust the spice level of the Baconnaise to your taste.
