Ingredients
  

For the Pot Roast

  • 2 to 3 pounds chuck roast Choose a well-marbled roast for best flavor.
  • 2 large onions, sliced
  • 1 packet French onion soup mix
  • 1 cup beef broth Use low-sodium broth if desired.
  • to taste Salt and pepper
  • 2 tablespoons olive oil For searing the roast.
  • Fresh herbs optional, for garnish Such as parsley or thyme.

Preparation

  • Preheat the oven to 300°F (150°C).
  • Season the chuck roast with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned.

Cooking

  • Place sliced onions in a roasting pan. Place the roast on top of the onions.
  • Sprinkle the French onion soup mix over the roast and pour the beef broth around it.
  • Cover the roasting pan tightly with foil and bake for 3 to 4 hours, until the meat is tender.
  • Remove from the oven and let rest for a few minutes before slicing. Serve with the onions and pan juices. Garnish with fresh herbs if desired.

Notes

For extra flavor, add some sliced mushrooms to the onions before roasting. Ensure to sear the roast well before putting it in the oven for added depth of flavor. Use a meat thermometer to check doneness; it should reach an internal temperature of 190°F (88°C) for best tenderness.
