Ingredients
  

For the chicken

  • 4 pieces Bone-in Chicken Thighs Bone-in for juiciness and tenderness
  • 1/4 cup Honey Can swap for maple syrup
  • 2 teaspoons Chipotle Chili Powder Adjust to spice preference
  • 2 tablespoons Olive Oil Vegetable oil as a substitute
  • 1 teaspoon Garlic Powder Fresh garlic can be used
  • 1 teaspoon Salt Opt for sea salt for best results
  • 1 teaspoon Black Pepper Freshly cracked pepper is ideal

For the gouda mash

  • 2 pounds Russet Potatoes Classic base
  • 1/2 cup Milk Almond milk or cream can be used
  • 1 cup Smoked Gouda Cheddar can be used as an alternative
  • 1/4 cup Unsalted Butter Can skip or substitute with olive oil

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper.
  • Rub this mixture all over the chicken thighs, ensuring they are well coated.

Cooking

  • Place the chicken thighs on a baking sheet and roast in the oven for about 35-40 minutes, or until the internal temperature reaches 165°F (75°C).
  • While the chicken cooks, peel and chop the russet potatoes. Boil them in salted water until they are soft, about 15-20 minutes.
  • Drain the potatoes and return them to the pot. Add milk, smoked gouda, and unsalted butter. Mash until smooth and creamy.
  • Once the chicken is done, remove it from the oven and let it rest for a few minutes before serving.

Notes

For extra crispiness, broil the chicken for a few minutes at the end of cooking. Adjust the chipotle chili powder according to your spice preference; you can even leave it out for milder flavors. Use a potato masher or ricer for the potatoes to achieve a smoother texture.
