Ingredients
  

For the Croquettes

  • 2 large potatoes boiled and mashed
  • 1/2 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 1 large egg beaten
  • Salt and pepper to taste
  • Oil for frying
  • Katsu sauce for serving

Preparation

  • Boil the potatoes until tender, then peel and mash them.
  • Season the mashed potatoes with salt and pepper.
  • Form the mixture into small patties or balls.
  • Set up a breading station with flour, beaten egg, and panko breadcrumbs.

Cooking

  • Dredge each patty in flour, dip in egg, and coat with panko.
  • Heat oil in a frying pan over medium heat.
  • Fry the croquettes until golden brown on both sides.
  • Drain on paper towels and serve hot with katsu sauce.

Notes

Serve hot with katsu sauce. If you have leftovers, store in an airtight container in the fridge for about 3 days. Reheat in the oven or a frying pan.
