Preparation

  • Heat olive oil in a large skillet over medium-high heat. Season the beef roast with salt and pepper, then sear it on all sides until browned.
  • Transfer the roast to a slow cooker.
  • In the same skillet, add onions, garlic, carrots, and celery. Cook until slightly softened.
  • Add the diced tomatoes, beef broth, and Italian seasoning to the skillet, stirring to combine.
  • Pour the vegetable and broth mixture over the roast in the slow cooker.

Cooking

  • Cover and cook on low for 7-8 hours or until the meat is tender.
  • Once finished, shred the beef with two forks and serve it with the sauce, garnished with fresh parsley.

Notes

Serve Italian Pot Roast with mashed potatoes, polenta, or a side of crusty bread. The sauce is flavorful and can be spooned over the meat and sides. For extra flavor, let the roast sit at room temperature with the seasoning for 30 minutes before cooking. If short on time, you can cook on high for about 4-5 hours, but low and slow is best for tenderness. Adding vegetables like potatoes or bell peppers can enhance the dish even more. A variation can include adding red wine to the broth mixture for a deeper flavor; just reduce the amount of beef broth slightly to compensate.
