  • 1 cup orzo pasta
  • 4 cups vegetable or chicken broth Homemade broth can enhance flavor.
  • 2 cups fresh spinach, chopped Can substitute with kale or Swiss chard.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium tomatoes, diced
  • 1 teaspoon olive oil For sautéing.
  • Salt and pepper to taste
  • Crusty bread for serving Great for dipping.

Cooking

  • In a large pot, heat olive oil over medium heat.
  • Add diced onion and sauté for 3-4 minutes until softened.
  • Stir in minced garlic and cook for an additional minute until fragrant.
  • Add diced tomatoes and sauté for another 2 minutes.
  • Pour in the broth and bring to a boil.
  • Once boiling, add the orzo pasta and cook according to package instructions until al dente.
  • Stir in the chopped spinach and let it wilt for about 2 minutes.
  • Season with salt and pepper to taste.
  • Serve hot with crusty bread.

Notes

For an extra touch, sprinkle some grated cheese on top of the soup before serving. Store leftover soup in an airtight container in the fridge for up to three days or freeze in portions.
