Ingredients
  

For the sandwich

  • 8 ounces Italian meats (such as salami, ham, and pepperoni)
  • 8 ounces Creamy cheeses (such as provolone or mozzarella)
  • 4 cups Lettuce Chopped or shredded
  • 2 medium Tomatoes Sliced
  • 1 medium Red onion Thinly sliced
  • 1/2 cup Pepperoncini Sliced
  • 1/4 cup Oil and vinegar dressing More to taste
  • 4 rolls Sub rolls or hoagie rolls Split in half

Preparation

  • Slice the sub rolls in half.
  • Layer the Italian meats and cheeses on the bottom half of the roll.
  • In a mixing bowl, combine lettuce, tomatoes, red onions, and pepperoncini.
  • Drizzle with oil and vinegar dressing and toss to combine.
  • Pile the salad mixture over the meats and cheeses in the sandwich.
  • Place the top half of the roll on the sandwich.
  • Slice the sandwich into portions and serve.

Notes

To store leftover sandwiches, wrap them tightly in plastic wrap or foil. Place them in the refrigerator for up to 2 days. For added crunch, consider adding sliced cucumbers or bell peppers. Make the dressing ahead of time for convenience.
