Preparation

  • In a large pot, cook the chopped bacon over medium heat until crispy.
  • Add the diced onion and minced garlic, cooking until softened.
  • Stir in the cabbage and potatoes, sautéing for a few minutes.

Cooking

  • Pour in the stock and bring to a boil.
  • Reduce heat and let simmer for 20-25 minutes, or until the potatoes are tender.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with fresh parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. For a creamier soup, blend a portion and stir it back in. Consider adding a bay leaf or thyme for extra flavor.
