  • 1 teaspoon vanilla extract
  • 1 cup almond flour Use for gluten-free option.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (semi-sweet or dark) You can adjust sweetness.
  • 1 cup oat flour Use for nut-free version.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix the smooth cottage cheese, honey, and vanilla extract until well combined.
  • Add in the almond flour, oat flour, baking soda, and salt. Mix until you have a smooth dough.
  • Gently fold in the chocolate chips.
  • Transfer the cookie dough into a 10-inch skillet, spreading it evenly.
  • Bake in the preheated oven for about 20-25 minutes, or until the edges are golden brown and the center is set.
  • Remove from the oven and let it cool slightly before serving.

Notes

This skillet delight is best enjoyed warm. Consider adding a scoop of vanilla ice cream or a dollop of whipped cream on top. You can also sprinkle some extra chocolate chips or nuts for an added touch. Store leftovers in the fridge for up to 3-4 days.
