  • 16 oz Frozen French Fries Pick your favorite style like crinkle-cut.

For the hollandaise sauce

  • 4 large Egg Yolks Feel free to use pasteurized yolks for safety.
  • 2 tbsp Lemon Juice Vinegar is a suitable alternative if needed.
  • 1 cup Unsalted Butter Using clarified butter prevents separation.
  • 1/4 tsp Cayenne Pepper Adjust to your preference or leave it out.
  • 1/4 cup Chicken Stock Vegetable broth works great for a vegetarian twist.

For the toppings

  • 2 tbsp Unsalted Butter (for scrambled eggs) Keeps your eggs moist and soft.
  • 4 large Eggs Swap for egg whites for a lighter option.
  • 6 oz Bacon Try turkey bacon or plant-based options for a healthier choice.
  • 6 oz Breakfast Sausage Feel free to substitute with vegetarian sausage.
  • 1 cup Cheddar Cheese Curds Shredded cheese can be used if curds aren’t available.
  • 2 tbsp Green Onions Chives can be a lovely alternative.

Instructions
 

Cooking the base

  • Cook the tater tots or French fries according to the package instructions until they are golden and crispy. Set aside.

Making the hollandaise sauce

  • In a medium saucepan, whisk together the egg yolks, lemon juice, and a pinch of salt over low heat. Stir constantly until the mixture thickens slightly.
  • Gradually add the unsalted butter while continuing to whisk until the sauce is smooth and creamy. Stir in the cayenne pepper and chicken stock. Remove from heat and set aside.

Preparing the toppings

  • In a skillet, melt 2 tablespoons of butter over medium heat. Crack in the eggs and scramble until cooked to your desired doneness.
  • In the same skillet, cook the bacon and breakfast sausage until crispy and fully cooked. Drain any excess fat.

Assembling the dish

  • To assemble, place a generous amount of tater tots or fries on a plate. Top with scrambled eggs, bacon, breakfast sausage, and cheese curds.
  • Drizzle the hollandaise sauce over the top and garnish with green onions.
