  • 2 pieces chicken breasts Ensure they are at room temperature before cooking.
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup honey
  • 1 tablespoon red pepper flakes Adjust to taste for less heat.
  • 2 tablespoons olive oil For searing the chicken.
  • to taste Salt and pepper
  • for garnish Fresh parsley

Preparation

  • Preheat oven to 375°F (190°C).
  • Season the chicken breasts with salt and pepper.
  • In a small bowl, mix together honey, red pepper flakes, and crumbled feta cheese.

Cooking

  • Heat olive oil in an oven-safe skillet over medium heat.
  • Sear the chicken breasts for about 4-5 minutes on each side until golden brown.
  • Pour the honey-feta mixture over the chicken in the skillet.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.
  • Garnish with fresh parsley before serving.

Notes

Serve with roasted vegetables, salad, rice, or quinoa. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 2 months.
