Mochi Ingredients

  • 1 cup sweet rice flour (mochi flour)
  • 1/3 cup sugar
  • 1/2 cup water
  • 1 ripe banana mashed banana Use very ripe bananas for the best flavor.
  • Cornstarch For dusting, to prevent sticking.
  • Sesame seeds or shredded coconut Optional for coating.

Preparation

  • In a bowl, mix the sweet rice flour and sugar together.
  • Gradually add water to the flour mixture, stirring until smooth.
  • Add the mashed banana and mix well.
  • Pour the mixture into a microwave-safe dish.
  • Cover the dish with plastic wrap, leaving a small gap to allow steam to escape.
  • Microwave on high for about 2-3 minutes until the mixture thickens.
  • Remove from the microwave and stir. Then, cover and microwave for an additional 1-2 minutes.
  • Let it cool slightly, then dust your work surface with cornstarch.
  • Transfer the mochi mixture to the dusted surface and knead gently until smooth.
  • Divide the mochi into small portions and roll each portion into a flat rectangle or oval shape.
  • Fill each piece with a small amount of banana or other filling if desired, then roll tightly.
  • Dust with more cornstarch, sesame seeds, or shredded coconut if using.

Notes

Store any leftover mochi rolls in an airtight container at room temperature for up to two days, or refrigerate for longer storage. Dust with cornstarch again if they stick together.
