Preparation

  • Slice the cucumbers into thin rounds and place them in a large bowl.
  • In a separate bowl, whisk together the honey, lime juice, minced jalapeño, salt, and pepper until well combined.
  • Pour the honey-lime dressing over the cucumbers and toss to coat.
  • Add the chopped cilantro and toss gently again.
  • Let the salad sit for about 5 minutes to allow the flavors to meld.
  • Serve chilled.
