Ingredients
  

  • Boneless skinless chicken breasts - 1 lb
  • Honey - 1/4 cup
  • Fresh lime juice - 2 tablespoons
  • Lime zest - 1 teaspoon
  • Garlic cloves, minced - 2
  • Salt and pepper - To taste
  • Oil for cooking - 2 tablespoons
  • Cooked rice (white or brown) - 1 cup
  • Fresh cilantro (chopped) - 1/4 cup

Instructions
 

  • Preheat oven to 400°F
  • Combine honey, lime juice, lime zest, garlic, salt, and pepper in a bowl to make glaze
  • Season chicken breasts with salt and pepper
  • Heat oil in a skillet over medium-high heat
  • Cook chicken for 2-3 minutes per side until golden
  • Pour glaze over chicken during the last 3 minutes of cooking to caramelise
  • Meanwhile, mix cooked rice with cilantro, 1 tablespoon lime juice, and additional salt to taste
  • Press rice mixture into a ring mold on a plate
  • Top with avocado slices and place glazed chicken over the rice
  • Drizzle any remaining glaze over the stack and garnish with extra cilantro

Notes

Use thin-cut or pounded chicken for even cooking
Agave nectar can substitute honey for a vegan option
Canola or avocado oil recommended for cooking
Rice can be left unflavored with just herbs and lime juice
Store unused avocado in lemon juice to prevent browning
