Ingredients
  

For the Chicken

  • 1 lb boneless skinless chicken breasts
  • ¼ cup honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • Salt (to taste)
  • Pepper (to taste)
  • Oil (for cooking)

For the Rice and Avocado

  • 1 cup cooked rice (white or brown)
  • ¼ cup fresh coriander, chopped
  • 1 tablespoon lime juice
  • Salt (to taste)
  • 2 ripe avocados, sliced
  • 1 tablespoon lime juice
  • Salt (to taste)
  • Pepper (to taste)

Instructions
 

Chicken Preparation

  • In a bowl, mix honey, lime juice, lime zest, minced garlic, salt, and pepper.
  • Add chicken breasts to the bowl and coat them well with the marinade. Let the chicken marinate for at least 15 minutes.
  • Heat a little oil in a skillet over medium heat. Cook the marinated chicken for 6-7 minutes on each side, or until the chicken is cooked through and golden brown. Remove from the skillet and let it rest before slicing.

Rice and Avocado Preparation

  • In a mixing bowl, combine the cooked rice, chopped coriander, and lime juice. Add salt to taste and mix well.
  • For the avocado, slice them and sprinkle with lime juice, salt, and pepper to enhance the flavor.

Assembly

  • To assemble, start with a layer of the rice mixture on a plate.
  • Add slices of the honey lime chicken on top.
  • Finally, arrange avocado slices on top of the chicken. Repeat layers if desired.

Notes

Serve warm with extra lime wedges on the side. This dish can be paired with a side salad or tortilla chips. Store leftovers in an airtight container in the refrigerator, keeping avocados separate to prevent browning. Enjoy within 2-3 days for best flavor.
