Ingredients
  

For the Chicken Marinade

  • 2 pieces chicken breasts Boneless, skinless
  • 1/4 cup honey
  • 1/4 cup lime juice Freshly squeezed

For the Avocado Rice

  • 2 cups cooked rice Can be white or brown rice
  • 1 piece avocado, diced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a bowl, mix honey and lime juice.
  • Marinate the chicken breasts in the honey-lime mixture for at least 30 minutes.

Cooking

  • Grill the chicken until cooked through, about 6-7 minutes per side.
  • In a separate bowl, combine the cooked rice, diced avocado, cilantro, salt, and pepper.

Serving

  • Slice the grilled chicken and stack it on top of the avocado rice.
  • Serve immediately.

Notes

Best served fresh off the grill. Pair with a side of vegetables or salad for a complete meal. Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat carefully to keep the chicken juicy.
