Ingredients
  

  • Chicken Breast, 1 unit (about 6-8 oz)
  • Brown Rice, 1/2 cup (uncooked)
  • Fresh Cilantro, 1 handful
  • Lime, 1 unit
  • Avocado, 1 unit
  • Jalapeño, 1/4 unit
  • Red Onion, 1/4 unit
  • Olive Oil, 1 tbsp
  • Garlic, minced, 1 clove
  • Salt, to taste
  • Black Pepper, to taste
  • Honey, 2 tbsp
  • Lime Juice, 2 tbsp (from 1 lime)

Instructions
 

  • Rinse rice and add to a pot with 1 cup water. Bring to a boil, reduce heat, cover, and simmer 15-20 minutes until tender.
  • Combine 2 tbsp honey, 2 tbsp lime juice in a bowl. Marinate chicken in 1/2 the glaze for 10 minutes.
  • Heat 1 tbsp olive oil in a pan. Sear chicken over medium heat until golden (4 min/side). Toss leftover glaze, add 1 tbsp to pan; cook until chicken is done (internal temperature 165°F).
  • Top rice with cooked chicken, sliced avocado, jalapeño, and red onion. Garnish with fresh cilantro and additional lime wedges.

Notes

Use chicken thighs for juicier texture; adjust cook time if using bone-in
Substitute white rice for faster cooking
Swap quinoa for brown rice and extra protein
Use ripe Hass avocado for creamiest texture
Adjust jalapeño quantity for spice preference
