  • 1/2 cup Honey (or maple syrup/agave nectar as substitutes) Adjust sweetness to taste.
  • 1/2 cup Unsalted Butter (melted)
  • 1 cup Cornmeal
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Garlic Powder
  • 2 large Eggs (beaten)
  • Chopped Chives or Parsley (optional garnish) For added flavor and presentation.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the fresh corn kernels, creamed corn, sour cream, and half of the shredded cheddar cheese.
  • Add the honey and melted butter, mixing well.
  • In another bowl, whisk together the cornmeal, baking powder, salt, black pepper, and garlic powder.
  • Gradually add the dry ingredients to the wet mixture, stirring until combined.
  • Beat the eggs in a separate bowl and then fold them into the batter.
  • Pour the mixture into a greased 9x13-inch baking dish.
  • Top with the remaining cheddar cheese.

Baking

  • Bake in the preheated oven for 45-50 minutes, or until golden brown and set.
  • Let it cool for a few minutes before serving.

Notes

This casserole is best served warm. It pairs well with grilled meats, roast chicken, or as part of a holiday meal. To store leftovers, let cool completely and cover or transfer to an airtight container. Can be refrigerated for 3-5 days or frozen for 2-3 months.
