Ingredients
  

Vegetables

  • 1 pound carrots, peeled and sliced
  • 1 pound green beans, trimmed

Glaze & Seasoning

  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • to taste Salt and pepper

Garnish

  • 1 tablespoon chopped fresh parsley for garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the sliced carrots and green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper until evenly coated.

Cooking

  • Spread the vegetables in a single layer on a baking sheet.
  • Roast for 20-25 minutes, or until the carrots are tender and slightly caramelized, and the green beans are tender-crisp. Stir halfway through cooking.
  • Remove from the oven and transfer to a serving dish.

Serving

  • Garnish with chopped fresh parsley.
  • Serve immediately and enjoy!

Notes

Cut the carrots into uniform sizes for even cooking. Adjust the amount of honey based on your preferred level of sweetness. Feel free to add other vegetables like bell peppers or zucchini for variety. Stir the vegetables a few times during roasting for even caramelization. If you have leftovers, store them in an airtight container in the refrigerator for up to three days.
