Ingredients
  

Brownie Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

For the Ice Cream Sandwiches

  • 2 pints vanilla ice cream

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In another bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add to the butter mixture, mixing until just combined.
  • Spread the batter evenly onto the prepared baking sheet.
  • Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the brownies to cool completely in the pan on a wire rack.
  • Once cooled, cut the brownies into squares or rectangles.
  • Place a scoop of vanilla ice cream between two brownie pieces to make sandwiches.
  • Wrap the sandwiches in plastic wrap and freeze for at least 1 hour before serving.

Notes

Store wrapped sandwiches in the freezer. Best enjoyed fresh, within the first few days.
