  • 1 lb chicken thighs or breast, sliced Boneless skinless thighs work great for tenderness.
  • 2 tbsp olive oil
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Serving Ingredients

  • Pita bread
  • Vegetables for serving (lettuce, tomatoes, cucumbers, etc.)
  • Yogurt or tahini sauce for drizzling

Instructions
 

Marination

  • In a bowl, combine olive oil, cumin, coriander, paprika, turmeric, garlic powder, onion powder, salt, and pepper.
  • Add sliced chicken to the marinade and coat well. Let it marinate for at least 30 minutes.

Cooking

  • Preheat a grill or skillet over medium heat.
  • Cook the marinated chicken for about 5-7 minutes on each side, until cooked through and golden.
  • Slice the cooked chicken and serve in pita bread with your choice of vegetables and sauce.

Notes

For more flavor, let the chicken marinate for a few hours or overnight. Use a meat thermometer to check that the chicken reaches an internal temperature of 165°F. Experiment with different spices for a new flavor profile.
