  • 1 medium Onion, chopped Shallots can be used for a milder taste.
  • 1 tsp Garlic Powder Fresh minced garlic works well for a bolder taste.
  • 1 tsp Onion Powder Be mindful of amounts if you’re adding fresh onion.
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 4 cups Potatoes, thinly sliced Russet or Yukon Gold potatoes are ideal.
  • 1 can Cream of Mushroom Soup Homemade mushroom sauce is a great fresh alternative.
  • 1/2 cup Milk Cream can be used for extra richness or a plant-based milk for a dairy-free option.
  • 2 cups Shredded Cheddar Cheese Feel free to experiment with various cheeses.
  • 1 tsp Paprika Optional, for garnish. Smoked paprika can enhance the depth of flavor.
  • 2 tbsp Butter, melted Used for greasing your baking dish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, brown the ground beef and chopped onion until the beef is fully cooked and the onion is soft.
  • Drain any excess grease from the skillet.
  • In a large mixing bowl, combine the cooked beef, garlic powder, onion powder, salt, and black pepper.

Layering and Baking

  • Layer half of the sliced potatoes in a greased baking dish.
  • Spread half of the beef mixture over the potatoes.
  • Pour half of the cream of mushroom soup over the beef layer, followed by a sprinkle of half the milk.
  • Repeat the layers with the remaining potatoes, beef mixture, soup, and milk.
  • Top with shredded cheddar cheese and melted butter.
  • Cover the dish with aluminum foil and bake for 1 hour.
  • Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Notes

Serve the Hobo Casserole hot with a fresh side salad or steamed vegetables. It's also great with bread. For extra flavor, consider adding your favorite vegetables like carrots or bell peppers. If you love spice, add a pinch of cayenne pepper or some hot sauce to the beef mixture. A vegetarian version can be made using lentils or mushrooms.
