  • 2 pieces flour tortillas
  • 1 cup cooked chicken, shredded Make sure chicken is cooked and shredded beforehand.
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to use different types of cheese.
  • 1/2 cup chopped green onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Preparation

  • Preheat a skillet over medium heat.
  • In a mixing bowl, combine shredded chicken, ranch dressing, and chopped green onions.

Cooking

  • Heat one tortilla in the skillet and spread half of the chicken mixture over it.
  • Sprinkle half of the cheese on top.
  • Place the second tortilla on top and press down gently.
  • Cook for 3-4 minutes until the bottom is golden brown, then carefully flip and cook for another 3-4 minutes.
  • Remove from heat, slice into wedges, and serve warm.

Notes

Serve the quesadilla warm, cut into wedges for easy sharing. It pairs well with a side of salsa, guacamole, or extra ranch dressing. You can also add a fresh salad or some vegetable sticks for a complete meal. To store leftovers, let the quesadilla cool down and place it in an airtight container. It can be kept in the refrigerator for up to 3 days. If you want to reheat, simply place it in a skillet over medium heat until warmed through.
