  • 6 large large eggs
  • 2 medium medium potatoes, peeled and diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 cup shredded cheese (cheddar or your choice) Use your preferred cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh herbs (optional, for garnish)

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat and sauté the onion and bell pepper until softened.
  • Add the diced potatoes and cook until tender, about 10-12 minutes. Season with salt and pepper.

Cooking

  • In a bowl, beat the eggs and mix in the shredded cheese.
  • Pour the egg mixture over the cooked vegetables in the skillet.
  • Cook on the stovetop for a few minutes until the edges set, then transfer the skillet to the oven.
  • Bake for 15-20 minutes or until the frittata is fully set and lightly golden on top.
  • Allow to cool slightly before slicing. Garnish with fresh herbs if desired and serve warm.

Notes

This frittata can be enjoyed warm or at room temperature. It pairs well with fresh salad or crusty bread. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days, or frozen for up to 2 months. Experiment with different vegetables and cheeses for varied flavors.
