Ingredients
  

Dry Ingredients

  • 1 cup rolled oats Use old-fashioned rolled oats for best results.
  • 1/2 cup almond flour Can be substituted with other nut flours.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt Enhances flavor.

Wet Ingredients

  • 1/4 cup honey or maple syrup Adjust sweetness to taste.
  • 1/4 cup coconut oil, melted Can substitute with unsalted butter.
  • 1/2 cup fresh lemon juice Use fresh lemons for best flavor.
  • 1 tablespoon lemon zest Adds a strong citrus flavor.
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or line it with parchment paper.
  • In a bowl, mix the rolled oats, almond flour, baking powder, and salt together.
  • In another bowl, combine the honey (or maple syrup), melted coconut oil, fresh lemon juice, lemon zest, and vanilla extract. Stir well.
  • Pour the wet ingredients into the dry ingredients and mix until combined.
  • Spread the mixture evenly in the prepared baking dish.

Baking

  • Bake for 20-25 minutes, or until the edges are golden.
  • Allow the bars to cool in the dish for about 10 minutes, then lift them out and cool completely on a wire rack.

Serving

  • Once cooled, cut into squares and enjoy!

Notes

These bars can be served as a light dessert or a healthy snack. They are delicious on their own or can be served with a dollop of Greek yogurt. For added sweetness, sprinkle some powdered sugar on top.
