Ingredients

  • 1 lb lean ground beef
  • 4 large Russet or Yukon Gold potatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cheddar cheese, shredded
  • 1 cup low-sodium beef broth
  • 1 cup sour cream or Greek yogurt
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • Heat the olive oil in a large skillet over medium heat.
  • Sauté the chopped onion and minced garlic for 2 to 3 minutes until translucent.
  • Add the ground beef to the skillet and cook until browned; drain excess fat if necessary.
  • Stir in the paprika, oregano, salt, and pepper.
  • Thinly slice the potatoes into uniform rounds.
  • Layer half of the sliced potatoes in the bottom of the prepared baking dish.
  • Spread the browned beef mixture over the potatoes.
  • Layer the remaining potato slices on top of the beef.
  • In a separate bowl, whisk together the beef broth and sour cream/Greek yogurt, then pour the mixture evenly over the dish.
  • Cover with foil and bake for 45 minutes.
  • Remove the foil, sprinkle with shredded cheddar cheese, and bake for an additional 20 minutes until the potatoes are tender and the cheese is melted and bubbly.
  • Remove from the oven, garnish with fresh parsley, and serve.

Notes

For a protein boost, use Greek yogurt instead of sour cream. Ensure potatoes are sliced thinly so they cook through evenly. If the potatoes are not tender after the baking time, recover and bake for an additional 10 minutes. Store leftovers in an airtight container for up to 3 days.
