  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups uncooked pasta Consider whole grain or gluten-free.
  • 2 cups beef broth
  • 1 cup diced tomatoes Canned or fresh.
  • 1 cup shredded cheese Use cheddar or mozzarella for flavor.
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil For cooking.

Preparation

  • In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened.
  • Add the ground beef or turkey to the skillet and cook until browned, breaking it apart as it cooks.
  • Stir in the uncooked pasta, beef broth, diced tomatoes, paprika, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat and cover. Simmer for about 10-12 minutes or until the pasta is cooked through.
  • Remove from heat and stir in the shredded cheese until melted.
  • Serve hot.

Notes

You can serve Healthy Hamburger Helper directly from the skillet. Pairs well with a simple side salad or steamed vegetables. Top with extra cheese or fresh herbs for added flavor.
