Ingredients
  

Main Ingredients

  • 1 lb chicken breast, diced and seasoned with salt and pepper Lean protein option.
  • 2 cups sweet potatoes, diced Rich in fiber.
  • 2 cups cooked brown rice Whole grain base.

Seasoning and Drizzle

  • 1 tbsp olive oil For roasting sweet potatoes.
  • 1 tsp paprika For flavoring sweet potatoes.
  • to taste salt and pepper For seasoning.
  • 2 tbsp tahini For drizzle.
  • 1 tbsp lemon juice For drizzle.
  • 1 tbsp water To thin the drizzle.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the diced sweet potatoes with olive oil, paprika, salt, and pepper.

Roasting Sweet Potatoes

  • Spread the sweet potatoes on a baking sheet and roast for 20 minutes, or until tender.

Cooking Chicken

  • While the sweet potatoes are roasting, heat a skillet over medium heat.
  • Cook the diced chicken in the skillet until it is browned and cooked through, about 6-8 minutes.

Making The Drizzle

  • In a small bowl, whisk together the tahini, lemon juice, and water to make the drizzle.

Assembling The Bowls

  • Layer cooked brown rice, chicken, and roasted sweet potatoes in serving bowls.
  • Drizzle the tahini sauce over the top before serving.

Notes

Serve warm. You can add fresh greens or avocado for extra creaminess, and a sprinkle of sesame seeds or fresh herbs for flavor.
