  • 1 cup Celery, chopped
  • 1/2 cup Dried cranberries Can be substituted with diced apples or grapes.
  • 1/2 cup Greek yogurt or mayonnaise Adjust based on your preference for creaminess.
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Pepper To taste.
  • 1/2 cup Nuts (optional, like pecans or walnuts), chopped Add for extra crunch.

Preparation

  • In a large bowl, combine the shredded chicken, chopped celery, and dried cranberries.
  • In a separate bowl, mix Greek yogurt or mayonnaise with salt and pepper to taste.
  • Pour the dressing over the chicken mixture and mix until everything is well coated.
  • If desired, add chopped nuts for extra crunch.
  • Serve immediately in sandwiches or over a bed of greens, or refrigerate for later use.

Notes

Store in an airtight container in the refrigerator for 3 to 4 days. Add nuts just before serving for crunch. Can be made dairy-free by substituting Greek yogurt with dairy-free options or avocado.
