Ingredients
  

Main Ingredients

  • 2 cups cooked pasta Whole wheat pasta can be used for added fiber.
  • 1 cup cooked chicken, shredded Leftover chicken works great.
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup fresh basil, chopped

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice Adjust to taste.
  • Salt and pepper to taste

Preparation

  • In a large bowl, combine the cooked pasta, shredded chicken, cherry tomatoes, avocado, and fresh basil.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the pasta salad and toss gently to combine.
  • Serve immediately or refrigerate for later.

Notes

Great for meal prep! You can store in an airtight container in the refrigerator for 2-3 days. Flavors blend even better after sitting.
