  • 1 lb chicken breast, diced Rotisserie chicken can be used for quicker option
  • 2 inches ginger, sliced Adjust to taste
  • 4 cloves garlic, minced Adjust to taste
  • 2 pieces carrots, chopped
  • 2 ribs celery, chopped
  • 1 piece onion, chopped
  • 8 oz noodles Use rice or zucchini noodles for a gluten-free version

Preparation

  • In a large pot, bring the chicken broth to a simmer over medium heat.
  • Add the diced chicken breast, sliced ginger, minced garlic, chopped carrots, celery, and onion to the pot.

Cooking

  • Let the soup simmer until the chicken is cooked through and the vegetables are tender.
  • In a separate pot, cook the noodles according to the package instructions.
  • Once the noodles are ready, drain them and add them to the soup pot.
  • Stir the soup gently to combine all the ingredients and let it simmer for a few more minutes.
  • Season with salt and pepper to taste.

Serving

  • Serve the ginger garlic chicken noodle soup hot in bowls, garnished with fresh herbs if desired.

Notes

Store any leftover soup in an airtight container in the refrigerator for 3 to 4 days. For longer storage, consider freezing without noodles to avoid mushiness. You can also add other vegetables like spinach or bell peppers for extra nutrients.
