  • 1 head Garlic Use fresh garlic for the best flavor
  • 1 medium Onion
  • 2 tablespoons Olive oil For sautéing the onion
  • 4 cups Vegetable broth Use low-sodium if preferred
  • 1 teaspoon Thyme Fresh or dried
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Black pepper Adjust to taste
  • 1/2 cup Cream Optional; can use non-dairy alternative
  • for garnish Croutons

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wrap the garlic in foil and bake for about 30-35 minutes until soft.
  • In a pot, heat olive oil over medium heat and sauté the onion until translucent.
  • Squeeze the roasted garlic into the pot and stir well.
  • Add the vegetable broth, thyme, salt, and black pepper. Simmer for 15-20 minutes.
  • Blend the soup until smooth and stir in the cream if desired.
  • Serve warm, garnished with croutons.

Notes

If you have leftovers, let the soup cool completely before transferring it to an airtight container. Store it in the refrigerator for up to 3 days or freeze for up to 3 months, leaving space for expansion. For a thicker soup, reduce the amount of broth. You may add vegetables like carrots or spinach for extra nutrition and blend in some cooked potatoes for a creamier texture.
