  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1/2 cup grated carrot
  • 1/4 cup finely chopped onion
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Preparation

  • Cook the elbow macaroni according to package instructions; drain and let cool.
  • In a large bowl, combine the mayonnaise, grated carrot, onion, and apple cider vinegar. Mix well.
  • Add the cooled macaroni to the dressing mixture and stir until everything is evenly coated.
  • Season with salt and pepper to taste.
  • Refrigerate for at least 1 hour before serving to let the flavors meld.

Notes

Serve chilled as a side dish. It pairs well with grilled meats, sandwiches, or any main course. For garnish, add extra grated carrot or chopped green onions. Store leftovers in an airtight container in the refrigerator for up to 3 days.
