  • 1 tablespoon olive oil For sautéing
  • 1 medium onion, chopped Add sweetness to the soup
  • 2 cloves garlic, minced For flavor
  • 2 medium carrots, diced For texture and sweetness
  • 2 stalks celery, diced Adds crunch
  • 4 cups vegetable or chicken broth Base of the soup
  • 1 cup cooked chicken, shredded Optional for added protein
  • 1 can kidney beans, drained and rinsed For additional protein and fiber
  • 1 teaspoon dried oregano For flavor
  • Salt and pepper to taste For seasoning
  • 1 medium Juice of 1 lemon For brightness

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  • Stir in the carrots and celery, cooking for another 5 minutes.
  • Pour in the broth and bring it to a boil.
  • Add the shredded chicken (if using), kidney beans, oregano, salt, and pepper.
  • Simmer for 30 minutes to let all the flavors blend.
  • Add the lemon juice before serving.
  • Garnish with chopped parsley.

Notes

Use fresh ingredients for the best flavor. You can adjust the seasoning to your taste.
