Ingredients
  

For the Meatballs

  • 1 lb Ground lamb (or beef or pork)
  • 1 cup Minced onion
  • 3 cloves Garlic (minced)
  • 1 large Egg
  • 1 cup Feta cheese
  • 2 tbsp Greek seasoning
  • 1 tsp Salt adjust to taste

For the Tzatziki Sauce

  • 1 cup Plain yogurt (strained)
  • 1 medium European cucumber (peeled and drained)
  • 2 tbsp Chopped fresh mint
  • 2 tbsp Chopped fresh dill
  • 1 tsp Salt

For the Lemon Rice

  • 2 cups Cooked rice (white or brown)
  • 2 tbsp Lemon juice (freshly squeezed)
  • 1 tsp Salt
  • 1 tsp Black pepper (freshly ground)

For Assembly

  • 1 cup Tomatoes (diced)
  • 1 cup Diced cucumber (well drained)
  • 1 cup Hummus
  • 1/2 cup Crumbled feta
  • 1 tbsp Chopped dill or parsley
  • 1 tsp Sumac
  • 4 units Pitas (soft and warm)

Instructions
 

Preparation

  • In a large bowl, mix together the ground lamb (or your choice of meat), minced onion, minced garlic, egg, feta cheese, Greek seasoning, and salt. Form the mixture into small meatballs.

Cooking

  • Heat a skillet over medium heat. Add olive oil and place the meatballs in the skillet. Cook for about 8-10 minutes, turning occasionally until they are evenly browned and cooked through.

Making Tzatziki Sauce

  • In a separate bowl, combine the strained yogurt, peeled and drained cucumber, chopped mint, chopped dill, and salt. Mix well and set aside.

Preparing Lemon Rice

  • In another bowl, mix the cooked rice with fresh lemon juice, salt, and black pepper. Stir until well combined.

Assembling the Bowls

  • Start with a base of lemon rice in each bowl. Top with meatballs, diced tomatoes, diced cucumbers, a scoop of hummus, and a generous dollop of tzatziki sauce. Sprinkle crumbled feta on top and garnish with chopped dill or parsley. Serve with warm pitas on the side.

Notes

Serve each gyro bowl with warm pita bread. You can allow your guests to customize their bowls by adding extra toppings such as fresh herbs or more tzatziki sauce. This dish is great for family dinners or meal prep throughout the week.
