  • 1 pound elbow macaroni Cook according to package directions
  • 1 cup mayonnaise
  • 1/4 cup sweet pickle relish
  • 1/4 cup chopped celery
  • 1/4 cup chopped onion
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon yellow mustard
  • 1 teaspoon salt Adjust to taste
  • 1/2 teaspoon black pepper Adjust to taste
  • 2-3 chopped hard-boiled eggs (optional) For added texture
  • paprika (for garnish)

Instructions
 

Cooking the Macaroni

  • Fill a large pot with water, add a pinch of salt, and bring to a rolling boil. Add the elbow macaroni and cook until al dente. Drain and rinse with cold water.

Crafting the Dressing

  • In a large mixing bowl, combine mayonnaise, sweet pickle relish, chopped celery, onion, apple cider vinegar, yellow mustard, salt, and pepper. Whisk until creamy and mixed well.

Combining and Chilling

  • Add the drained macaroni to the dressing and gently toss to combine. If using hard-boiled eggs, stir them in now. Cover tightly and chill in the fridge for at least an hour.

Final Touches

  • Before serving, stir the salad again and taste for seasoning. Garnish with paprika and serve cold.

Notes

Store in an airtight container in the refrigerator for 3 to 5 days. Rinse macaroni with cold water to prevent mushiness. Chill for better flavor.
