  • 1/2 cup goat cheese or feta, crumbled You may substitute with blue cheese or mozzarella.
  • 1/4 cup fresh basil, chopped

Vinaigrette Ingredients

  • 1/4 cup olive oil For brushing the peaches and for the vinaigrette.
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Preparation

  • Preheat the grill to medium-high heat.

Grilling Peaches

  • Brush the peach halves with olive oil and place them face down on the grill.
  • Grill for about 4-5 minutes until grill marks appear and the peaches are softened.

Making the Vinaigrette

  • In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to create the vinaigrette.

Combining the Salad

  • In a large serving bowl, combine the mixed greens, grilled peaches, crumbled cheese, and chopped basil.
  • Drizzle the vinaigrette over the salad and toss gently.

Serving
